The Breakfast Brunch

Hey! do you remember in my last blog post when I said I would be posting weekly? Well I made this bold claim back in January and it's now June...although this year has been a cluster-f*ck of crazy so can you really blame me?

So, a brief catch-up - since we last spoke, I've had to move back to the southwest because of the lockdown and for some reason thought it was a great idea to pack a single suitcase with enough clothes for a month and no summery items because when we made the move, it was freezing and I seemed to forget Summer was a thing. Also after a large amount of procrastination and an obscene amount of stress I handed in all my assignments and officially finished my first year at Drama School, although my last class happened on a random Friday and it doesn't feel 100% real just yet I keep forgetting and thinking I need to "get on with work" when I don't have any work to "get on with".

One of the things I have been missing during this time at home is going out to eat, especially breakfast - there are so many Brunch places in London that I just LOVE maybe one day I'll do a list of my favourite places to grab breakfast when all of this is over. - Leave a comment if you'd like this :). So I have stepped up my breakfast game and thought I would leave you some recipes of my top 3 healthy(ish) breakfasts. So, without further ado...

Banana Oat Pancakes

Ingredients: 

1 Banana
1/2 cup Oats (I just used Tesco Saver Porridge Oats - gotta get those savings in!)
1 egg
2 Spoons of Natural Yogurt (Again just a cheap one from Lidl but you can get bougie with it if you like)
1/2 tsp of Baking Powder (Not baking soda. Apparently they are different things, can anyone explain?!!)

Toppings of your choice <3



Method

This could not be easier, I put all the ingredients into a food processor and whizzed it all up until smooth.

Next I heated up a Non-Stick pan on a medium/low heat - these pancakes can burn super easily so do be careful! And I sprayed the pan with my low cal Sunflower Oil but coconut oil or butter would work fine too.

I used a tbsp to spoon the mixture onto the pan, using the bottom of the spoon to smooth it into a circular shape. When bubbles started to form on the top of the pancakes I flipped them over and cooked the other side. I was able to cook 3 pancakes at a time but this depends on the size of your pan but this saved a lot of time!

I topped my pancakes with strawberries and almond butter, but maple syrup also goes well but this drives the calories up a little.


Chocolate and Banana Porridge


Ingredients

1 serving of Porridge Oats
Water
1 banana
Chocolate Powder
Strawberries (or topping of your choice)
Chia Seeds (Optional)

Method 

I cut the banana in half, I set aside one half for the topping and mashed up the other half with a fork.

Next I cooked the porridge oats in water (those Tesco Saver oats do be making a comeback) by the instructions on the pack - but on the hob - I find that this makes the porridge consistency so much smoother.

While it was cooking I added the mashed banana to the pan and mixed it in to the oats. Then I added 2 tsp of chocolate powder and mixed this in.

Once the oats were all cooked I added them to a bowl and topped with the other half of the banana which I sliced up and a handful of strawberries. Then I sprinkled some Chia Seeds on the top of it all.

Smoothie Bowl

Do you like soft serve ice-cream for breakfast but healthy? yeah me too.

Ingredients

Your choice of frozen fruit - I used frozen strawberries and blueberries.
Museli
Banana
Strawberries (or your choice of topping!)
Almond Butter (or any other kind of nut butter)
Almond Milk (Or any milk that you drink)

Method

This is probably the easiest breakfast that I included on this little brunch appreciation post but it's one of my favourites, especially during the summer.

I added 1 serving of frozen fruit and half a banana to a food processor with a splash of milk, I blended until smooth adding in small amounts of Almond milk until I got the desired consistency.

I added this to a bowl and topped with sliced banana, strawberries and Museli, before drizzling almond butter over the top of it all.
